Ang Ku Kueh (Red Turtle Rice Cake)




Thanks to the mom and sis LeeLi for sending the Ang Ku mold to me. My first attempt and it is a success. Not only it looked great but it also tasted great. Thanks to Lily's recipe http://lilyng2000.blogspot.com/2005/09/ang-koo-ah-mah-chew.html. I used parchment paper instead of banana leave.

Hi Li Ping,
I don't have banana leaves so I also use parchment paper but my kueh all stuck to the paper. How come yours din stick to the paper?

My Ang Ku's have never stick to the parchment paper before. When I remove the Ang Ku from the mold, it is not sticking to my hand. I think it is a balance of just enough flour so that it is not too wet or too dry.


You have asked a very good question. My neighbor gave me some Bah Chang and she was asking me why her glutinous rice was sticking to the leaves. Perhaps she did not wipe her bamboo leaves before she wrap?

Perhaps Auntie Lily will have a better answer.
