Lady Fingers / Okra and Tomato with Basmati Saffron Rice

Ingredient:
1 medium onion
2 cloves of garlic
4 tsp ginger
2 tsp curry powder
10 small tomatoes or 2 medium tomatoes
2 cups chickpeas (optional)
2/3 cup water
1 tsp salt
black pepper

Method:
Saute onion, ginger, garlic
Add curry powder (cook for 2 min)
Add tomato, water (and chickpeas) (cook for 3 min)
Add okra, salt and pepper (cook for 10 min)

For the basmati saffron rice, add 3 - 4 strands of saffron to 2 cups of basmati rice and cook in rice cooker with water or stock.
